Leek, Sweet Potato, Kale & Broccoli Soup Recipe

Nikki was busy in the garden this week and harvested an abundant crop of organic vegetables. It’s such an amazing feeling to be able to go out into the garden to pick our own vegetables. No more long check-out queues at the supermarket. What a win!

Here she shares with you how to utilize some of those by making a simple, delicious and healthy leek, sweet potato, broccoli and kale soup:

  • Preparation Time: 20 mins
  • Cooking Time: 30 mins
  • Total Time: 50 mins
  • Serves 4 to 6 people

Ingredients

The ingredients needed to make the soup are straight-forward, wholesome and inexpensive. Ideally you can grow many of these yourself! Don’t have a garden? No problem, at the very least, you can grow your own herbs in our vertical gardens:

  • 1 Onion
  • 4 Cloves Of Garlic
  • 1 De-seeded Chilli
  • 1 Large Sweet Potato
  • Large Bunch Of Kale
  • Half A Head Of Broccoli
  • 2 Large Leeks
  • 1 Tin Of Coconut Milk
  • 1 Litre Of Vegetable Stock
  • Handful Of Fresh Thyme
  • Pinch Of Salt And Pepper

Preparation

Preparation is a snap and will only take a few minutes of your time. You’ll have a mouth-watering bowl of soup on your table in the blink of an eye:

  • Peel the onion and garlic
  • A top tip for peeling garlic is to lay a knife blade flat on top of the clove and press down with the palm of your hand, which will crack the skin and make it easier to remove
  • Freezing the onion for 10 minutes before chopping can help eliminate the sulfuric acid which makes your eyes tear up
  • Finely chop the onion, garlic and chilli
  • Rinse your hands with cold water after this step to minimize the after-smell of the garlic and to avoid getting any irritants in your eyes!
  • Wash the leeks, kale and broccoli then chop
  • Peel the sweet potatotes then dice
  • Finely chop the thyme

Cooking Instructions

Cooking is just as simple. All you need to do is follow these easy step below:

  • Heat some coconut oil in a large pot
  • Add the garlic, onion and chilli to the pot and simmer cook until soft, stirring regularly
  • When the onion turns translucent, add the chopped leek and cook until soft and colourless. Don’t forget to keep stirring to avoid burning!
  • Next add the chopped kale and cook until soft
  • Then add the chopped broccoli and diced sweet potatoes and allow to cook
  • Mix the vegetable stock with 1 litre of boiling water and add to the pot
  • Pour in the coconut milk
  • Reduce the heat and simmer for 30 mins, until the sweet potatoes are soft
  • Season to taste with sea salt and black pepper
  • Blend the soup with a handheld blender
  • Stir in the fresh thyme, and voila! Your soup is ready to serve

Serving

Serve whilst hot in a soup bowl or cup, with some fresh bread.
